Massaged Kale Salad

Delicious salad when you want something a little different.

Ingredients

2 bunch
fresh kale,stems removed
1/2 c
parmigiano-reggiano, grated
1/3 c
olive oil, extra virgin
1/4 c
lemon juice, fresh
3 clove
minced garlic
1 Tbsp
soy sauce, low sodium
1/2 tsp
anchovy paste or 1 filet diced fine
1/2 tsp
fresh ground black pepper
1/4 tsp
salt,(optional)
1 1/2 Tbsp
sesame seeds toasted

Step-By-Step

1Tear the kale leaves into bite size pieces,rinse with cold water and drain well,pat dry if needed.
2Combine all of the other ingredients in a large enough bowl to hold everything.
Whisk the dressing first,then add the kale and massage the dressing into the kale using your hands until it reduces to about half.
3Serve with warm pita bread slices and freshly shaved Parmesan cheese,enjoy!!! :)
