Ham Salad

Kathy Sterling

My mother used to say that the best part of a Ham during the holiday's was the ham salad she made from the left overs. I have to say I am inclined to agree with her.

I only make this at Thanksgiving, Christmas and Easter when we typically cook a ham. I do get enough to freeze enough ham to make it in the mean time.

This ham salad is good anytime of the year and even though I prefer it on a sandwich of white or wheat bread, it is great on crackers as well.

I hope you enjoy it as much as I enjoy eating it!
