1Combine all salad ingredients in large bowl. In small bowl, wisk together 1 cup mayonnaise, 5 Tbsps red wine vinegar, 3 Tbsps sugar, and a dash of black pepper. Pour dressing over salad and refrigerate 3-4 hours or overnight to develop flavors. Enjoy!
2Water chestnuts can be substituted for cashews.
