Ingredients

4 can(s)
black-eyed peas
4 oz
feta cheese
1 c
black olives, quartered
1 bunch
fresh chives, chopped
1 clove
garlic, minced
1 bunch
fresh spinach, washed & chopped
1 large
lemon - use the zest and juice
1 large
bell pepper, chopped (optional)
24 small
cherry tomatoes, cut in 1/2s or 1/3s

Step-By-Step

1Add the chopped spinach to a large bowl.

2Crumble the feta cheese into the bowl.

3Add all the other ingredients. Mix well before serving.
