Apple & Carrot Salad (No Mayo)
An easy, no-mayo salad for summer. Cook time is chilling time.

- 2 large
- granny smith apples, skin on and julienned (about 3 cups)
- 3 large
- carrots, peeled and julienned (about 2 cups)
- juice of 1 large orange
- 3 Tbsp
- olive oil
- 2 Tbsp
- chopped fresh italian parsley
- 1/4 tsp
- ground black pepper, to taste
1Toss the apples and carrots in a salad bowl with the orange juice and olive oil. Sprinkle with the parsley, season with the salt and pepper, and toss again.
2Chill in refrigerator for 30 minutes. Serve cold.
