Ingredients

3 c
baby spinach leaves
1 c
fresh arugula leaves, torn if needed)
1 large
avocado
3
fresh mandarin oranges

Step-By-Step

1Prepare a batch of lemon vinaigrette dressing. Refrigerate.
2Prepare a batch of sweet and spice pecans. Set aside.
3Peel the mandarin oranges and divide them into sections.
4Peel and pit the avocado. Cut into thin slices.
5Place spinach, arugula, avocado slices, mandarin orange sections and pecans in a large bowl.
6Pour the lemon vinaigrette dressing over the salad.
7Toss gently to mix ingredients and coat with the dressing.
8Serve immediately.
