Ingredients

6 c torn lettuce
2 tomatoes, cut in wedges
4 oz mozzarella cheese, cubed (1 cup)
1 c drained garbanzos
1/2 c thinly sliced pepperoni, (try new mini sized)
1/4 c sliced green onion
1/2 c italian salad dressing

Susan's Notes:

I came across this salad recipe as I was looking through one of my old recipe books. I used to make this and had forgotten about it. This is such an easy salad to put together. I like simple sometimes.

The Garbanzo Beans add unusual texture to many dishes and this one is not any different.

 

Directions

1
In a large salad bowl combine all ingredients except dressing.

Pour the salad dressing over. Toss lettuce mixture lightly with dressing. Sprinkle with salt and freshly ground black pepper to taste.

My kids love this one...I will have to remember the next time they come over for a meal to serve this.

Don't you just love garbanzos? I always have some on hand.

Yes, I do! You know, I never discovered them until 'way into my adulthood. Must have come up in a recipe or something. My mother never served them, which probably means my father didn't like them--she catered a lot to his tastes. I think I have some in the pantry right now, too! One thing I use them for is vegetarian chile.

Of course when I make Hummus..and do a bit....you have to use garbanzos...but I have over the years just thrown a few here and there into my salad...not just this recipe... :) They don't have the gaseous enzymes as other beans do...

Hi Missy, so nice to see you; it has been a bit. I haven't been active lately because I have had some health issues and am continuing on my journey to good health; but I now am able to join in once again on JAP.

This is a great simple recipe, isn't it? My kids love it as well and so do my Grandkids. If they like it I guess I could say, 'kids approved', as well.

I found mini sliced Pepperoni, a new product in the store up here in
Alaska. These would be perfect for this salad and also would be perfect for hors d'oeuvres and mini pizzas! They are so 'cute' and a wonderful size for kids too.
