Fresh Kale Salad

I had never eaten kale before, much less raw in a salad. I am hooked. You feel like you are eating healthy!

3 fresh bunch
green or black tuscan kale
1 Tbsp
minced garlic
1/2 c
julienned reconstitued sundried tomatoes
1/2 c
crumbled feta cheese
1/2 c
julienned dried apricots
fresh lemon juiced
3 Tbsp
olive oil
1 tsp
kosher salt
1 Tbsp
crushed red pepper flakes


1Wash kale very well and dry. In a large mixing bowl add the kale, salt and lemon juice. Toss well. If you do not add the lemon juice the kale willl darken
2Add all other ingredients and mix well. Can be served immediately or refrigerate until time of service. Can be held for three days.
