Easy classic caesar salad
It's yummy w/ any Italian meal!
Or make it and add grilled, sliced chicken breasts for a whole meal.

- 1 large
- head of romaine lettuce, torn into bite-size pieces
- 2 c
- reduced-fat, store-bought italian-style croutons
- 1 c
- light mayonnaise
- 1/2 c
- fat-free milk
- 2 Tbsp
- lemon juice
- 1/2 c
- plus 1 tbsp grated parmesan cheese
- 2 tsp
- minced garlic
- 1/2 tsp
- salt and pepper
- 2 0z can anchovies in oil, drained
1In lg bowl, combine lettuce and croutons.
2In bowl, whisk together mayonnaise, milk, lemon juice, 1/2 cup parmesan cheese, garlic, salt and pepper until smooth.
3Add dressing to lettuce and croutons. Toss to coat evenly. Top w/ anchovies and remaining parmesan cheese.
