Zesty Cranberry Waldorf Salad

Refreshing twist on Waldorf Salad, with dried cranberries, lemon and orange zest. I have never been a big fan of Waldorf salad, so I looked at several recipes and came up with one I really like. This is one I take to Thanksgiving and Christmas dinner. Go ahead give it a try, it's apple season and they are probably on sale. You can use any apple but I have found Granny Smith apples are the best for this salad. They impart a better flavor.

Ingredients

1 1/2 c
good quality mayonnaise (i use helmans)
1 1/2 c
sour cream
3 Tbsp
honey
4 1/2 c
tart apples, peeled and diced (granny smiths are the best apple for this recipe)
3 c
celery, diced
1 1/2 c
walnuts, chopped
3 c
red seedless grapes, halved
1 c
dried cranberries
1
orange, zested
1
lemon, zested
2-3 c
miniture marshmallows

Step-By-Step

1In medium sized bowl mix together the first 3 ingredients for the dressing, refrigerate until ready to use.

2In large bowl mix together diced apples, celery, walnuts, grapes, cranberries, lemon and orange zest.

3Pour dressing mixture over apple mixture. Mix throughly until all ingredients are coated.

4Add miniture marshmallows and mix again. Cover and refrigerate until ready to serve. Mix again right before serving.
