TORTELLINI FRUIT SALAD

SPRING'S coming just around the corner.Time to think good healthy salads. Here's one that a Co worker brought in to our pot luck lunch. Enjoy! We did.

Ingredients

24 oz
cooked tortellini ( your choice )
3/4 c
orange juice
3/4 c
maple syrup
2 Tbsp
ground cinnamon
pinch
of salt
1 pt
strawberries sliced
1/2
of a cantaloupe ( cubed )
1 c
fresh green seedless grapes some cut in half some whole
1 c
fresh red seedless grapes some cut in half and some whole
1 pt
blueberries, fresh
1/2 c
raisins or craisans ( your choice )
1/2 c
candied walnuts ( optional )

Step-By-Step

1Cook pasta as directed. Rinse with cold water ~ drain well.
2Toss with 2 teaspoons oil.
3Set aside.
4Add fruit and ( CANDIED WALNUTS ** if you choose to use to your salad )...
5mix orange juice,maple syrup,cinnamon,salt in a shaker. ~~Shake Well~~
6Refrigerate all till ready to serve.
7Add dressing.
8CANDIED WALNUTS
In non stick skillet on medium heat. Add 1/2 cup Walnuts and 1 tablespoon sugar.
Stir constantly.
Remove when Walnuts are covered in sugar and sugar is well melted.
