3 c carrot
1/2 c organic raisins
1 md apple, red delicious
1 md stalk of celery
DRESSING
1 md apple, red delicious
2 c grated carrot
1/2 c almonds
fresh apple juice or distilled water

Kim's Notes:
This is an all-raw salad, that is rich in nutrients and extremely healthy for you.

This recipe comes from a recipe book of mine called "Recipes for Life page 154" it is vegetarian and uses mostly all "live" or "living" ingredients -- as they would say. This is my most favorite of the salads.

My husband & I took an all weekend intensive courses with "Hallelujah Acres" learning how to eat with raw foods because I had become extremely ill after one of my mission trips.
We changed our diets for over a year to eating extremely healthy and mostly raw with a little chicken here and there.

I need to incorporate a little more raw foods back into our diet, so I thought I would share this recipe with you all. I will try and post a few more from the recipe book.

Directions

For Salad:
Peel and grate apple and carrots, and finely chopped celery. Combine all ingredients above in a bowl and toss. Mix in the following dressing:

For dressing:
In a blender, chop 1/2 cup of almonds, add 1 Red Delicious apple, peeled and cored and 2 cups of grated carrot; blend until creamy. Add a small amount of distilled water or fresh apple juice to reach consistency desired.

Here is the consistancy of my dressing. If you have a better blender or food processor you will be able to make it thinner.

Mix salad and dressing together and they are ready to be served.

Good one there KimO...I try to eat healthy too. I do use a lot of raw veggies in my diet. I eat very little red meat, mostly fish and chicken (but I do enjoy a good steak every now and then).
I eat lots of homemade soup and homegrown salad fixins.

This is a great vegan recipe, and I love that the dressing doesn't use any oil. This is a recipe I will definitely make. Thank You for posting this One.
