That was the day when an aunt created this wonder in my kitchen...a fruit Raitha!

I have loved it since then and after many variations...I came up with this version - all of whose ingredients you'll find at any/all grocery stores.

A no compromise dish...rich in taste, nutrient content and colors!

Ingredients

5 large
apples (red/green) shredded (big shreds)
1
1 inch ginger piece, shredded
3 c
organic yogurt
2 Tbsp
extra virgin olive oil (evoo)
3/4 c
peanuts
3/4 c
cilantro, finely chopped
salt to taste

Directions Step-By-Step

Heat EVOO in a pan and add peanuts to the same.

Once the peanuts have roasted, add the apple shreds, ginger and cilantro to the pan and fry them for about 10 min and turn off the heat.

Once the mixture has cooled, add yogurt and salt and serve (with rice/tortilla/tacos - whatever you would find under the sun!)
