Gingered Chicken and Fruit Salad

This is one of my family's favorite salads. It is great in warm weather.

Ingredients

2 c
cooked, cubed, chicken breast
3 medium
red delicious apples
3 medium
granny smith apples
1 c
white and/or red seedless grapes
2 c
pineapple chucks, fresh or canned
1/2 c
slivered almonds
2 c
mayonnaise
2 Tbsp
ground ginger

Step-By-Step

1Dice the apples.

2Cut grapes in half.

3In a small bowl, mix mayonnaise and ginger until well blended.
Set aside.

4In a large bowl, place chicken, fruit and almonds.
Toss lightly to mix.

5Add mayonnaise mixture and stir until ingredients are coated evenly.

6Store covered in refrigerator.

7Serve as a salad or stuffed in pita pockets. You can leave out the chicken for a side salad.
