It's fresh and crunchy and so refreshing for lunch or dinner- on these warm summer days- what am I saying it's darn right "HOT" here and many other places too! Give this a try you will love it or my name isn't "Kitchen Chatter" lol
Recipe on the back of my Sun-Maid Raisins.
sun-maid tropical trio or fruit bits or golden raisins
white grape juice or apple juice
light or regular mayonnaise or miracle whip salad dressing
mustard, spicy brown or dijon honey mustard
diced, cooked chicken or turkey
thinly sliced green onions
slivered almonds, toasted
mixer salad greedn
1Combine fruit and grape juice in a small saucepan and bring to a simmer. Stir. Refrigerate for 15 minutes.
2Mix together mayo and mustard in a medium bowl.
Add chicken, green onions and almonds. Mix well.
Stir cooked fruit into chicken mixture. Serve over salad greens as a main dish salad or in a pita pocket or on whole wheat bread as a sandwich filling.
3Variation: For fruited Curried chicken Salad, add 1 teaspoon curry powder to the mayo mixture.
