Healthier Broccoli Bacon Salad

This is one incredible broccoli salad recipe that I just love. The cranberries and water chesnuts give great texture and flavor and with bits of bacon really makes it a hit. The honey pear vinaigrette dressing is so delicious and pulls the salad together. I have made this salad several times for picnics and parties and someone is always asking for the recipe.

Ingredients

BROCCOLI BACON SALAD

4 c
broccoli crowns, finely chopped
8 oz
can sliced water chestnuts, chopped
4 Tbsp
dried cranberries
4 slice
bacon, cooked and crumbled

DRESSING

1/2 c
honey pear vinaigrette (earth & vine provisions or trader joe's brand)
2 Tbsp
mayonnaise
1/4 c
yogurt
pepper to taste

Step-By-Step

1Chop up your broccoli.
2Mix together ingredients for your salad dressing and set aside.
3Prepare your salad and toss with the dressing, then refrigerate till ready to serve. Toss one more time before serving.
4Honey Pear Vinaigrette
52-24-14 --- Made this tonight for my monthly "Girl's Night In" and the ladies loved it! Such a simple but delicious salad that is light and tasty too. I also tried chopped walnuts instead of almonds; both equally as good.
