Rachel's Storymy take on waldorf salad i ate as a kid every thanksgiving
granny smith apples
tart red apples (honey crisp are the best)
pineapple chunks or crushed (i prefer chunks)
pecans or walnuts
cream cheese, room temperature
small container of whipped topping
1cut fruit into bit sized chunks and marshmallows and in half put into large bowl
2warm marshmallow cream in microwave for 30 seconds and blend in cream cheese and whipped topping until a mayo like texture
3mix together store in the fridge until ready to serve

my dad used to make a waldorf salad every year for turkey day and I loved it but hated the mayo he used in it so I concocted my own version of it!!! This is a favorite every year and there are NEVER leftovers

Your recipe sounds delicious and I'm planning on making it for Thanksgiving. I need to make some dishes ahead. Do you think this would be ok to do 1 or 2 days ahead?
