Apple Slaw Salad

This is my variation on an old family recipe. It's good on a sandwich, mix it in with a green lettuce salad, or eat it on it's own... It's delicious!!

Ingredients

1 1/2 large
apples, cored & cut into matchsticks
3/4 c
carrot, cut into matchsticks (i buy it precut in matchsticks)
1/3 c
red onion, diced
1 oz
dried cranberries
1/2 c
slivered almonds

VINAIGRETTE DRESSING:

3 Tbsp
apple cider vinegar
3 Tbsp
honey
2 tsp
mustard (any flavor- regular, honey mustard, dijon, etc.)
1 1/2 tsp
poppy seeds
3 Tbsp
olive oil
pinch
salt & pepper

Directions Step-By-Step

In a bowl, mix the ingredients for the vinaigrette; set aside.

In a separate bowl, combine apple sticks, carrot sticks, and onion. Toss with the vinaigrette. Garnish with the dried cranberries and almonds. Refrigerate for at least 30 minutes before serving. Toss again just before serving.

*** toss all into a green salad, add cooked diced chicken and you have a wonderful meal!
