boneless, skinless chicken
1 tsp
olive oil
1/4 tsp
each, salt and pepper
4 Tbsp
favorite bbq sauce
10 c
shredded roamaine lettuce
2 c
seeded, diced tomatoes
1-1/2 c
diced cucmber
2 c
peeled, diced zucchini
2 oz
shredded cheddar cheese
1/2 c
chopped red onion
1/4 c
balsamic vinegar
2 Tbsp
dijon mustard
1 Tbsp
pure honey
2 Tbsp
canola oil
salt and pepper to taste

Directions Step-By-Step

Lightly oil grill grates w/ oil. Heat grill to high. Rub each chicken w/ 1 tsp oil, and season w/ salt and pepper.
Grill chicken 5 mins each side and then cool. In bowl, whisk together vinegar, mustard and honey. Whisk in 2 tbsp oil. Stir in basil.
Chop chicken into strips and add to lg bowl. Stir in BBQ sauce. In lg serving bowl, toss lettuce, tomatoes, cucmber, zucchhini, cheese and red onions. Stir in dressing. Top w/ chicken.
