Beef Soba Noodle Salad

This is a wonderful recipe for summertime if you choose to serve it cold. With the combination of limited meat and a lot of vegetables, it is a healthy one dish meal.

Ingredients

8 oz
soba noodles
2 Tbsp
peanut oil
4
green onions
2 clove
minced garlic
8 oz
beef strip steak cut in strips
2 Tbsp
soy sauce
2 Tbsp
hoisin sauce

cherry tomatoes
4 oz
snow peas
2 Tbsp
chopped basil
8 oz
peanuts, dry roasted
1 tsp
minced ginger

Step-By-Step

1Cook 8 ounces soba noodles according to package directions/drain
2Heat 2 tablespoons peanut oil in a skillet over medium.
3Add 4 chopped green onions, 2 cloves minced garlic, 1 teaspoon of minced ginger; cook until fragrant
4Add beef strip steak that has been cut into strips; cook for four minutes
5Add soy sauce, hoisin sauce, cherry tomatoes (halved) and snow peas; cook, stirring until vegetables have softened
6Remove from heat; stir in basil; toss mixture with noodles; serve warm or cold with chopped peanuts
