Ingredients

3 c
diced cooked turkey breast or other
2 tsp
taco seasoning mix
1 c
cooked black beans, drained
1 c
cherry tomatoes, cut in half
1 medium
roasted red bell pepper, diced
1 1/2 c
whole kernel corn,drained
2 medium
green onions,some tops, sliced
2 tsp
chopped fresh cilantro, more or less
1/8 tsp
each salt and pepper
1/2 c
creamy ranch dressing and dip
10 oz
pkg. torn salad greens
tortilla chips, taco shells soft or hard
Garnish:
sliced black olives and shredded cheddar cheese if desired

Directions Step-By-Step

Combine turkey and taco seasoning in a plastic bag and shake to coat add this and the, beans, tomatoes, pepper, corn, onions and cilantro in a medium bowl. Add remaining ingredients except,lettuce and chips,etc.

Mix dressing gently into mixture. Scoop turkey mixture onto lettuce lined platter to serve. Garnish with tortilla chips. Fill taco shells hard or soft(roll these up) and enjoy with your favorite drink!
