Super Easy 3 Bean Crockpot Chili

Another low point but satisfying weight watchers chili. My sister passed this recipe on to me. Enjoy! :)

Ingredients

1 lb
ground turkey, fat free
1 small
onion, chopped
1 can(s)
(28 ounces) diced tomatoes
1 can(s)
(16 ounces) tomato sauce
1 can(s)
(4.5 ounces) chopped chilies, drained
1 can(s)
(15 ounces) chickpeas, undrained
1 can(s)
(15.5 ounces) black beans, undrained
1 can(s)
(15.5 ounces) small red beans, undrained
2 Tbsp
chili powder (you can also substitute w/ a chili mix if you prefer)

FOR THE TOPPING:

1/2 c
red onion, chopped
1/2 c
chopped fresh cilantro
1/2 c
shredded cheddar cheese

Directions Step-By-Step

Brown turkey and onion in skillet until cooked through.

Drain off any fat and add to crockpot. Add the rest of the ingredients and mix well.

Cook on high 6-8 hours.

Note: I prefer to rinse my canned beans and I add in stock til I get the consistency I like. The goop (technical term LOL!)that the beans are packed in grosses me out. LOL! Sometimes I even pour in some beer for extra flavor. This of course is not how Weight Watchers would want you to do it. ;)
