Healthy unstuffed pepper casserole

Ingredients

1 lb
ground turkey breast
2 c
cooked rice, white or brown
1
green bell peppper, cut into bite-size pieces
1
onion, cut into bite-size pieces
1
14 oz can condensed tomato soup
1
8 oz can tomato sauce
1 tsp
dried basil
1 tsp
dried oregano
1/2 tsp
each, salt and pepper
2 Tbsp
butter
2 c
reduced-fat, shredded cheddar cheese

Step-By-Step

1Heat oven to 350. Spray a 9" x 13" baking pan w/ cooking spray. Spray a lg skillet w/ cooking spray. Place skillet over med-high heat.
2Cook turkey breast until fully cooked. Place turkey breast in lg bowl. Add rice, green bell pepper, onion, tomato soup, tomato sauce, basil, oregano, salt and pepper, mix well.
3Spoon mix into pan. Thin slices of butter and place on top of ingredients. Sprinkle w/ shreddded cheese. Cover w/ foil. Bake 30 mins. Remove foil and bake until cheese is bubbly.
