- torn kale leaves
- small onion, thinly sliced
- large tomato, diced
- generous handful of corn chips
- 3/4 c
- shredded pepper jack cheese
- 1 pkg
- ground turkey
1Saute onion for one minute. Add kale. Continue until kale is wilted, set aside.
2Meanwhile, pulse corn chips in a food processor to small pieces. Set aside. Grate cheese in food processor. Also set aside.
3Add kale/onion to processor bowl with tomato. Pulse several times. Add corn chips, turkey, 1/2 cup of cheese, turkey, salt and pepper to taste. Pulse several times until all ingredients are mixed.
4Place in oiled baking dish. Sprinkle remaining cheese on top. Bake at 350 for 40 minutes, or until done. Let sit for a few minutes then serve hot.
