Ingredients

1 1/2 Tbsp
unsalted butter
1 1/2 Tbsp
vegetable oil
1/2 c
minced onion
1/2 c
dry white wine
4 medium
ripe tomatoes, peeled, seeded and chopped
1 clove
garlic, minced
1 tsp
salt
1/4 tsp
ground black pepper
3/4 tsp
dried oregano
4 oz
feta cheese, crumbled
1 lb
raw large shrimp, shelled and deveined
1/4 c
chopped fresh flat-leaf parsley

Step-By-Step

1n a heavy skillet, sauté onion in butter and oil over medium-high heat until soft.
2Add wine, tomatoes, garlic, salt, pepper and oregano. Bring to boil, lower heat to medium, and simmer until sauce is slightly thickened.
3Stir in cheese and simmer for 10 to 15 minutes. Adjust seasonings.
4Just before serving, add shrimp to simmering sauce and cook for 5 minutes or until shrimp are just tender. Do not overcook.
5Garnish with parsley and serve immediately .
