Comtè, Olive & Arugula Grilled Cheese Sandwich

Ingredients

1 Tbsp
butter or olive oil for grilling (i used a mixture of both)
4 slice
whole wheat bread
2 Tbsp
kalamata olives, pitted and minced
2 Tbsp
mayonnaise
1 c
arugula, loosely packed (approximately)
2 slice
comtè cheese (gruyere can substitute)

Step-By-Step

1Heat up the olive oil and/or butter in a non-stick pan over medium heat.
2Spread two bread slices with the kalamata/mayo mixture. Top the other two bread slices with the cheese and arugula.
3Cook in the pan until golden brown on each side. Enjoy with a cold soup-cucumber, gazpacho or similar, as a suggestion!
