Spaghetti and Parmesan Meatballs

olive oil, extra virgin
In a large pot, on medium-high heat add oil and garlic, allow garlic to cook in oil about 6 minutes.
add tomatoes, oregano, salt and pepper.cook tomatoes until they begin to break down.
mix Italian pork and ground beef together, add salt and pepper
add 1/2 cup parmesan cheese to meatball mixture and add bread crumbs, combine and blend thoroughly
portion and form meatballs and set aside
Add water, sugar, and tomato paste or puree to sauce and stir
add 1/4 cup Cabernet Sauvignon to sauce mix
add 1/4 cup parmesan cheese to sauce and stir
add fresh basil leaves and allow to continue to cook about 1 hour on low-medium heat stirring ocassionally
In a large frying pan add 1/4 inch of olive oil and place meatballs in pan
cook meatballs evenly on all sides. (use a lid or cover when cooking to insure meatballs are cooked thoroughly
In a separate pan boil water and add spaghetti noodles cook about 7-10 minutes.
place meatballs in a baking pan, sprinkle with fresh parmesan and cook on low heat about 7-10 minutes
add fresh basil to sauce prior to serving
strain noodles and in strainer pour small amount of olive oil over noodles and toss in strainer until noodles are covered
