Mediterranean Salad Pizza

Inspired by a pizza salad my friend Lillian made, I decided to do a Mediterranean twist on it. This is so yummy and rather healthy. Once you try this, I'm sure you will make it often. Top the naan bread with your favorite salad (chef, cobb, caesar)...You can do so many things...make it you own. Cooking with Passion, sw:)

Ingredients

1 pkg
wholewheat naan flatbread
2 Tbsp
olive oil, extra virgin
1 oz
arugula
1 oz
spring mix
2-3 Tbsp
roasted red pepper, sliced
2-3 Tbsp
artichoke hearts, sliced
1/4 small
red onion, sliced
1/4 c
grape tomatoes, quarted (i used yellow)
1/4 c
kalamata olives, sliced
1/4
cucumber seedless, small cubes
2 oz
herb goat cheese, crumbles
4-6 slice
sopressata salami, sliced in strips

DRESSING

1/4 c
olive oil, extra virgin, divided
1 tsp
lemon juice, fresh
1 1/2 tsp
oregano
salt & pepper to taste
**you can add or take away in veggies you wish**

Directions Step-By-Step

warm bread in oven or microwave. spread 1 Tbsp of olve oil on each piece of naan bread (2). top bread with salad mix, arugula & sliced onion

meanwhile, in a small mixibg bowl, combine salad ingredients. top remaining salad ingredients on flatbread. top with goat cheese & salami

drizzle dressing on top of salad when ready to eat. enjoy!
