Ingredients

1 lb
italian pork sausage
1 1/2
zucchini cut and cubed with peel on
2 c
green peppers cut into 1 inch pieces
2 c
chopped onion
1 Tbsp
chopped garlic
1 large
can italian tomatoes peeled
2 c
uncooked rice
2 c
chicken stock
1 c
parmesan cheese

Step-By-Step

1Cook sausage in a skillet until brown.

2Cook zucchini, green pepper, onion, and garlic in oil from sausage for 10 minutes. Put in 1/2 cup parmesan cheese rice and mix well

3Put all ingredients in a casserole dish cover and bake for 1 to 1 1/2 hours. The last 15 minutes top with the other 1/2 cup parmesan cheese and return to oven.

4Serves 6-8
