Preheat oven to 350 degrees F. Line a 7 x 11" baking dish with aluminum foil then coat with cooking spray.
In a medium bowl, combine confectioners' sugar, bourbon, salt, pepper & vanilla; mix well & set aside.
Place pork tenderloin in baking dish; season with salt, pepper & garlic powder. Spoon 1/2 of sugar mixture over pork & bake 25 minutes.
Remove tenderloin from oven & spoon remaining sugar mixture over it. Bake an additional 5 - 10 minutes for medium, or until desired doneness.
Cut into 3/4" slices & serve with sauce from pan.
