Apricot pork w/ snow peas.

This also is a recipe I got from my dad. He was an excellent cook. In fact he was a chef in the Navy, so a lot of my recipes come from him.
I may tweak them from time to time, but they stay true to the original recipe as much as possible.

2/3 c
apricot preserves, preferably low sugar or sugar free
3 Tbsp
light teriyaki sauce
2 Tbsp
dijon mustard
1 tsp
ground ginger
1 Tbsp
canola oil
boneless loin pork chops
1/8 tsp
salt & pepper.
1/2 lb
fresh snow peas
1/2 lb
uncooked angel hair pasta
scallions, sliced diagonally.
1 Tbsp
toasted sesame seeds.

Directions Step-By-Step

In bowl, stir together preserves, teriyaki sauce, mustard and ginger. Heat oil in lg skillet over med-high heat. Season chops w/ salt & pepper. Add chops to skillet and cook until browned and no longer pink inside. Cook pasta as directed, adding snow peas the last 5 min of cooking, drain. Place pasta and snow peas in lg serving bowl. Set aside 1/4 cup apricot sauce. Toss remaining apricot sauce w/ pasta mix. Garnish w/ scallions & sesame seeds. Serve w/ extra apricot sauce.
