summer/autumn essentials: sausage & pasta skillet
This is my idea of a lazy Summer or Autumn day meal. It’s essentially a one-skillet dish. Add some freshly baked bread, and you have yourself a great repast. I used a combination of ground Italian and chorizo sausage, to give it a bit of a different flavor bend… Works for me. So, you ready… Let’s get into the kitchen

Ingredients For summer/autumn essentials: sausage & pasta skillet
- PLAN/PURCHASE.

1 Tbspolive oil, extra virgin

1/4 citalian sausage, freshly ground
-
1/4 cchorizo, freshly ground
-
1/2 cmozzarella cheese, freshly ground
-
1/2 cparmesan cheese, freshly grated
-
4 - 5 ozyour favorite pasta, i’m using farfalle
-
2 cpasta sauce
-
1/4 tsporegano, dried variety
-
1/4 tspbasil, dried variety
-
salt, kosher variety, to taste
-
white pepper, freshly ground, to taste
How To Make summer/autumn essentials: sausage & pasta skillet

1PREP/PREPARE

2Gather your ingredients (mise en place).

3Cook the spaghetti in a pot of boiling water, until al dente.

4Remove the pasta, and reserve with about 1/4 cup of the pasta water.

5Add the oil to a skillet over medium heat.

6Chef’s Note: This skillet needs to be big enough to hold all the recipe ingredients, and be ovenproof. My skillet of choice is cast iron, but any good ovenproof skillet will do nicely.

7Add the Italian sausage, and chorizo to the pan, and cook until no longer pink, about 3 – 5 minutes.

8Use a wooden spoon to break up the sausage into crumbly bits.

9Add the dry spices to the pasta sauce, and season with a bit of salt and pepper, if needed.

10Chef’s Note: I prefer my pasta sauce a bit on the chunky side.

11Reduce the heat to low, add the sauce to the skillet, and combine with the cooked sausage.

12Add the pasta, the reserved pasta water, and toss with the sauce.

13Evenly sprinkle the two cheeses over the top.

14Place under a broiler until the cheese is melted and bubbly, about 3 – 4 minutes.

16Serve while still nice and hot with some crusty rolls. Enjoy.
