Oricchiette with sausage and broccoli

Oriecchiette are little bowl-shaped pasta "ears" that hold creamy sauces very well. For this, I used a chicken-garlic-spinach sausage. You can use any kind, really.

Ingredients

10 oz
oricchiette pasta
2 Tbsp
olive oil
1 small
onion, minced
2 clove
garlic, minced
1 small
crown of broccoli, chopped, including stem diced
2-4
sausage links, such as chicken sausage, chicken-garlic sausage, chicken-spinach-feta sausage, cut into small pieces
1 c
chicken stock
1/2 c
cream
1/2 c
good grated cheese such as romano or parmeggiano
fresh ground pepper and (optional) sprinkle of dried pepper flakes

Directions Step-By-Step

Cook pasta according to directions. In a medium saute pan, saute onion and garlic in olive oil until onions are translucent. Add broccoli and saute for 3-4 minutes, until it just starts to soften.

add broth and bring to a boil for 10min. Add cream and pasta and turn heat to low. Simmer for 5min. Add cheese, stir well, and add pepper and pepper flakes, if desired.
