Ingredients For vegetable stew - ethiopian style

1 lgonion, sliced

2 lgcarrots, sliced

3 mdred potatoes, cut 1 inch pieces

1/4head cabbage, sliced

8 ozgreen beans, sliced

3 clovegarlic, peeled and crushed

1/2 tspground ginger

1/2 tspground turmeric

1/2 tspblack pepper

1 tspsalt

3 cwater or vegetable broth
How To Make vegetable stew - ethiopian style

1In a skillet, brown the onion in ghee or vegetable oil over medium heat. Add in garlic and saute for 1-2 minutes more.

2Add the remaining vegetables and seasonings and blend well. Add the water or vegetable broth.

3Cook over low heat for 30-40 minutes until vegetables are tender. Serve hot.
