This truly is one of those recipes that vegetarians and meat-eaters alike will enjoy. These patties are chock full of flavor and have a very pleasant consistency. I like to top mine with some horseradish and just a bit of mustard. Mmmmmm.....


medium onion, chopped
2 Tbsp
extra virgin olive oil
medium zucchini, grated
red bell pepper, chopped
1 tsp
chili powder
2 tsp
garlic powder
salt and pepper to taste
1 Tbsp
dijon mustard
1 c
(to taste) thyme, oregano, basil, cilantro... what ever you have on hand
1 can(s)
black beans, drained

Directions Step-By-Step

Sautee the onion, bell pepper, zucchini and a pinch of salt in a skillet until tender (about 10 min). Place the beans in a bowl and mash with a fork. You want about 1/2 mash and 1/2 beans. Add the vegetable mixture and the remaining ingredients. Form into 4 patties and broil about 10 min each side.
You may have to add more oats depending on how wet your mixture is. You want them to be moist yet form-able.

Very excited to give your recipe a try! I make black bean veggie burgers all the time for myself & my recipe is very similar. WIth my recipe I usually add red onion, 1-2 eggs and bread crumbs. I love zucchini and mustard and never thought to trying adding it. It also never occurred to use oats in place of bread crumbs. Can't wait to make this and compare the two :) Thanks!
