This healthy dish is very versatile and easy to throw together. The meat can be changed to any kind of sausage and kale would work for the greens. I like it mild but it can be made with a kick depending on the type of Cajun seasoning you choose. You will be amazed at the beautiful presentation. The colors are so vibrant!

What a vibrant dinner. The aroma from the Italian sausage cooking and the seasonings was amazing. I couldn't wait to taste a bite. It's got a kick of Cajun seasoning I particularly enjoyed. This recipe is healthy and easy to make. A win-win!

Ingredients For sweets & greens *all together now*

  • 1 lb
    chicken mild italian sausage, casing removed
  • ¼ stick
    ghee (or butter)
  • ½
    sweet onion, chopped
  • 2-3
    cloves garlic, minced
  • 1½ lb
    pre-cooked (or frozen) sweet potatoes, cubed
  • 1-2 tsp
    cajun seasoning of choice
  • 1 bunch
    collard greens
  • 1-2 pinch
    seasoned pepper of choice (i like trader joes 21 salute)

    Brown the sausage in a skillet with melted butter. Add the garlic. Saute lightly and add the onion.

    When the onion is transparent, put the sweet potatoes in the pan with enough chicken broth to keep things from sticking. Put the lid on cook over medium heat a a few minutes.

    Stir the Penzey's Cajon Spice to taste. Layer the whole bunch of washed & chopped collard greens over the top and cover until the greens a slightly wilted. Gently stir the contents, add salt & Penzey's California Pepper to taste. Serve with pride.
