Stir fried rice-shrimp-vegetables

A quick 30-minute meal that's very light but filling! A great way to eat all your vegetables..

You can substitute the shrimp with diced chicken cubes.

Ingredients

1/8 c
white rice
4 Tbsp
shrimp
100 g
brocolli chopped
1 small
carrot, sliced
1/8 c
fresh green peas
6 pinch
salt
500 ml
water
2 clove
garlic chopped
1 medium
onion chopped
1/2 medium
red bell pepper

Step-By-Step

1Chop the vegetables;broccoli, red bell pepper,carrots and bring them to a boil over high temperature in about 5minutes
*water level should just cover them

2Cook the rice at this point for the next 15-20 minutes

3Remove and drain the vegetables

4To a non-stick pan, add the cooking oil
Proceed to add the garlic and onions until they are near browning

5Add the vegetables, stir fry them for about 3minutes
Add the shrimp, stir fry until the stock dries

6Add your rice
Turn down the heat to lowest setting and then stir until it's evenly distributed
