When you live on the coast, summer means seafood! Here in the south we put our own special spin on our family seafood dishes. Also posted you will find: Southern Coastal Clam Patties, Southern Beer-Cooked Shrimp, and (just for some variety!)a family fave called Amerasian Shrimp. All of these dishes are minimal prep and cooking time to get you out of the kitchen quickly. Pair these dishes with a cool, crunchy salad, a glass of iced tea; and you have a light summer-time meal!

Ingredients For southern coastal deviled crab

1/4 c(1/2 stick) butter

1medium sized yellow onion, chopped

1/2 cchopped green pepper
-
2 Tbspall purpose flour
-
1 1/4 cmilk
-
2large egg yolks
-
2 tspprepared mustard, yellow or spicy

1 Tbspworcestershire sauce
-
12 ozcrabmeat, flaked
-
1 cfresh or prepared bread crumbs
How To Make southern coastal deviled crab

1Preheat oven to 400 degrees F. In a medium sized saucepan, melt butter over moderate heat. Pour half of melted butter in small bowl and set aside. Add onion and green pepper to remaining butter in the saucepan and sauté until soft, about 5 minutes.

2Stir flour into onion mixture until well mixed. Gradually stir in milk. Cook, stirring constantly, until mixture thickens. Remove pan from heat.

3One at a time, add egg yolks to milk mixture, stirring well after each yolk has been added. Add mustard and Worcestershire sauce; stir thoroughly. Return pan to moderate heat and cook 1 minute. Remove pan from heat; stir in crabmeat until well mixed.

4Stir bread crumbs into the melted butter in the small bowl. Spoon the crab mixture into four 5 1/2 inch shallow oven safe dishes or medium size baking dish. Sprinkle buttered crumbs over crab mixture. Bake until the crab is heated through and crumb topping is golden brown. Serve while hot and delicious!
