Ingredients For southern coastal clam cakes

  • 2 can
    (6 1/2 ounces each) or 12 ounces fresh chopped clams. if canned, drained.
  • 2
    large eggs
  • 1 c
    saltine cracker crumbs (about 30 crackers)
  • 2 Tbsp
    finely chopped green onion tops
  • 1 Tbsp
    lemon juice
  • 1/2 tsp
    dried thyme leaves, crumbled
  • 3 Tbsp
    vegetable oil
  • lemon slices and tartar sauce, optional

How To Make southern coastal clam cakes

    In medium size bowl, combine clams, eggs, cracker crumbs, green onion tops, lemon juice, and thyme.

    In large skillet, heat oil over moderate heat. Spoon the clam mixture into 4 mounds in the skillet. Cook clam patties until browned on both sides, about 5 minutes for each side.

    Transfer clam patties to warm serving platter and garnish with lemon slices. Serve with Tartar Sauce while hot and delicious!
