Rush Hour Pasta and Peas

A nice fulfilling meal that is easy and tasty. You can add a pinch of hot pepper flakes if desired. Fresh peas are a bonus, but frozen will do. Do not use canned peas.

Ingredients

3 Tbsp
olive oil
2 clove
garlic, finely chopped
3
ripe tomatoes, coarsely chopped
2 stalk(s)
celery, finely chopped
1 c
fresh or frozen petite peas
8 oz
your choice of pasta
freshly grated parmesan cheese
1 Tbsp
chopped fresh parsley

Step-By-Step

1Heat the olive oil in skillet over medium heat. Add the garlic and saute until tender--do not brown.
2Add tomatoes, celery and peas. Cook 5 minutes, stirring occasionally.
3Serve over hot pasta, sprinkled with Parmesan cheese and garnished with parsley.
