Chunky Vegetable Stew with Chickpeas

Ingredients

2 Tbsp
oil

garlic cloves
1 c
chopped onions

celery stalks cut in chunks

carrots, cut in pieces
2
parsnips, scrubbed and sliced
1 large
potato, cubed
3 c
tomato juice
5 c
water
1/2 c
chopped parsley
1 tsp
marjoram
salt and pepper to taste
1 can(s)
chick peas, canned and drained
2 c
cabbage head, shredded

Step-By-Step

1Heat the oil in a large pan and toss the onion, garlic, celery, carrots, parsnips and potato in it over a low heat.
2Add the juice and water, marjoram, oregano, salt and pepper to taste.
3Increase the heat and simmer for 20 minutes.
4Add the drained chickpeas and the cabbage, if you are using it, and cook for a further 10 minutes.
