Baked Acorn Squash (in slow cooker)

This is a great meal to start in the morning before you leave the house and have dinner waiting on you when you get home. Pair this with a nice grain like wild rice, quinoa or freekeh.

Ingredients

2 medium
acorn squash
2/3 c
cracker crumbs (i use a vegan version)
1/2 c
coarsly chopped pecans
1/3 c
vegan margarine
4 Tbsp
brown sugar ( i used succanat)
1/2 tsp
salt
1/4 tsp
ground nutmeg
2 Tbsp
orange juice

Step-By-Step

1Cut squash in half. Remove seeds.
2Combine remaining ingredients. Spoon into squash halves. Place squash in slow cooker.
3Cover. Cook on low 5-6 hours, or until squash is tender.
