Mexican Vegetarian Tortilla For One

I think you will enjoy this vegetarian tortilla as much as I do. Sometimes I get tired of meat and just want something else. I add black olives sometimes also. This is a good healthy type lunch or light dinner with a small salad. Enjoy!!!!!!!!!!!!!!!!!!!!!!!!

portabella mushrooms, sliced
1 medium
zucchini, chopped
1 large
green bell pepper, chopped
1 large
red bell pepper,chopped
1 large
onion, chopped
1 pkg
taco seasoning
1 pkg
large flour tortillas

Directions Step-By-Step

In a large skillet with a small amout of olive or canola oil over medium heat cook veggies until they are all tender. About 10 minutes. Season veggies with taco seasoning. Fill tortilla, roll up carefully and enjoy.
