This is an easy recipe that my whole family loves. You can use red or green enchilada sauce and corn or flour tortillas. It usually depends on what I have on hand. Since I grew my own green chiles and canned a green chile enchilada sauce, I use the green. Mix and match all you want, it's all good !

Ingredients

2 lb
ground beef
1 small
onion,diced
1
bell pepper,diced
2 pkg
taco seasonings
4 c
shredded mexican cheese
1 pkg
corn or flour tortillas
2 pt
enchilada sauce, red or green
1 1/2 c
water

Step-By-Step

1In large skillet add ground beef, diced onion and diced bell pepper and cook till meat is done.

2Drain fat off and return to skillet. Add water and both packs of taco seasonings. Bring to boil then reduce heat and simmer till liquid is nearly gone.

3Spray a 9x13 baking dish and starting with some sauce,layer tortillas,sauce, meat then cheese.

4Repeat layers two or three more times and end with cheese on top.

5Bake at 350 degrees for 30-35 minutes. Let set for at least 5 minutes before serving.
