Ingredients

4 large
bell peppers
1 lb
ground turkey
1 large
onion (diced)
1 stalk(s)
celery (diced)
1 clove
garlic (diced fine)
1 tsp
chili powder
1 tsp
cumin
1 dash(es)
salt
1 dash(es)
pepper
1 c
fresh tomatoes (diced)
1 c
minute rice (uncooked)
1 can(s)
rotelli (tomatoes and chilies)

Step-By-Step

1Wash peppers and cut off tops. Take seeds out of peppers, I usually dice up tops of peppers and add to the filling.
2Fill large pan with water, bring to boil and add peppers for about 5 minutes. Remove peppers and drain.
3In a large salute pan add olive oil ground turkey, onion, celery ,garlic, and diced pepper, cook till turkey is cooked through and veggies are tender.
4Add all spices and fresh tomatoes and rice stir together well cooking another 3 minutes.
5Spray baking dish with cooking spray add peppers fill peppers with turkey filling cover with Rotelli tomatoes and chilies.
6Bake in 350 degree oven for 45 minutes or till done.
