You can buy good Italian sausage at almost any grocery store. The advantages to making your own are three-fold.
1). You know all your ingredients are fresh
2). You can change the spices to suit your personal tastes
3). There are no additional chemicals and preservatives added

This is the recipe that my Aunt Josephine taught me, a long time ago…

Ingredients

DRY INGREDIENTS

2 tsp
parsley
2 tsp
sea salt
1 tsp
thyme
1 tsp
garlic powder
1 tsp
fennel seeds
1 tsp
minced dried onions
1 tsp
freshly ground, black pepper
1/2 tsp
basil
1/2 tsp
oregano
1/2 tsp
marjoram
1/2 tsp
rosemary
1/2 tsp
red pepper flakes
1/2 tsp
paprika
1/2 tsp
brown sugar

ADDITIONAL INGREDIENTS

2 lb
fresh ground pork
2 Tbsp
red wine vinegar

Directions Step-By-Step

Mix all the dry ingredients together in a large bowl.

Add the ground pork, red wine vinegar, and then mix until thoroughly combined.

Cover and refrigerate 24 for hours before using.

Chef’s Tip: Rather than buy pre-ground pork I choose the type of pork I want and grind my own. If you don’t have a meat grinder, you can always pick your own cuts, and then have your butcher grind it for you.

Chef’s Note: Use this Italian sausage as you would any store-bought variety: Pizzas, spaghetti , the sky is the limit. Enjoy.
