1Place in bowl with egg 1 tablespoon milk or cream for each egg, a dash of salt and pepper. Whisk with whisk until light and fluffy.
2Heat butter or bacon grease (1/2 tbsp. for each egg) in medium hot skillet. Pour in egg mixture and reduce heat to low. (eggs should be scrambled slowly and gently.)
3When mixture starts to set at bottom and sides, lift cooked portions with spatula, and turn gently so as to cook all portions evenly.
4As soon as eggs are cooked through but are still moist and glossy (5 to 8 Minutes), quickly remove to hot patter and serve at once.
