Hurray!!!Finally, I made it to my 100th recipe!I got this recipe from my coworker and friend, Ester, who is from the Philipines. She brought this dish to work one time and I really liked it. So I asked her for the recipe. It is simple and delicious, especially if you have leftover turkey from Thanksgiving or some rotisserie chicken.
Soak rice noodles in warm water for 20-30 minutes. Meanwhile, fry the vegetables on sesame oil.First onion, celery, then cabbage. Then you can add the rest of the vegetables. Fry them for about 15 minutes.
Add cooked meat, fry for 5 minutes until heated through.Add the spices (except paprika).
Drain the noodles and add to veges mixture.Fry for about 10 minutes. Add the soy sauce. Add a little more oil as needed.
Cut the eggs in half and place them on the noodle mixture.Sprinkle the eggs with paprika.
I served this dish with Boston lettuce, grape tomatoes, avocado pieces, and feta cheese.
