Glazed Salmon with Mango Salsa

I was looking for something special for a dinner party and came across this. We love it!

Ingredients

GLAZED SALMON

1 c
pure maple syrup
3 tsp
ginger
juice of one lemon
1/2 tsp
lemon zest, grated
3 Tbsp
soy sauce
1 1/2 tsp
minced garlic
2 1/2 lb
center cut salmon filets
salt and pepper to taste

MANGO SALSA

1
ripe mango, peeled and diced
1/2
red onion, chopped
1
cucumber, seeded and diced
2 Tbsp
fresh cilantro
3 Tbsp
fresh lime juice
1
jalapeno pepper, chopped fine
1
avocado, diced
1
red pepper, diced
mix all of the above salsa ingredients to serve with salmon

Step-By-Step

1In a small heavy saucepan, simmer maple syrup, ginger, lemon juice, soy sauce, and garlic 30 minutes or until reduced, then allow to cool
2preheat oven to 350 degrees
3Lightly oil a shallow baking pan large enough to hold salmon
4Divide glaze mixture to reserve 11/2 cup of glaze to serve with cooked salmon and the rest to baste salmon with before and during cooking
5Place salmon skin side down. Season with salt and pepper if desired then brush with glaze
6Bake for 10 minutes then brush on remainder of basting glaze and bake 10 more minutes or until just cooked through
7Heat reserved glaze over low heat to use as a sauce. Keep glaze warm, and covered
8Server salmon with sliced lemon and warmed glaze with mango salsa on the side
9TIP! Maple glaze may be made up to 2 days ahead, chilled and covered. Bring glaze to room temperature before proceeding
