This recipe was born of neccesity, trying to keep a large apartment cool, and unable to afford a.c. The rice I made myself, the rest of the recipe was acquired on a refrigerator "hunt". Sometimes po'man meals are better than any expensive and time consuming one I can come up with...ijs!!

Ingredients

1 pkg
rice a roni creamy 4 cheese blend
3 c
cooked rice, your choice
2 large
boneless grilled chicken breast, sliced
2 medium
spicy brats, thin sliced (i used johnsonville
1 small
each, bell pepper and onion, diced
2 Tbsp
each, cumin and a-1 sweet mesquite dry rub
1/2 pt
mushrooms, or what's left in the fridge
1 jar(s)
15 oz. medium queso
1 stick
butter

Step-By-Step

1Gather all ingredients, cook rice according to directions.

2Rinse stove top rice of your own to remove excess starch. The butter and queso will make it creamy.

3Add other ingredients one at a time, stirring after each addition.

4Heat thru and serve.
